Pesto and Pasta

Kids love to take the healthy dish pesto and pasta with broccoli. It just takes 20 minutes to make it low in calories.

PREP: 5 minutes

COOK: 15 minutes

INGREDIENTS:

One garlic clove (unpeeled).

One head of broccoli (chopped into florets).

Two Tablespoon olive oil.

Pasta shells – 250g.

Toasted pine nuts – 30g.

Half lemon zested and juiced.

Half small pack basil.

30g Parmesan (or vegetarian), extra to serve.

Half small pack parsley.

METHOD:

1. Put the broccoli and garlic into the roasting tray. Add olive oil (one tablespoon). Roast it for about 10-12 minutes till softened after 180-200C heat.

2. Chump the pasta shells into a boiling saltwater pan. Blend the ½ small pack parsley, ½ small pack basil, 30g toasted pine nuts, ½ lemon juice, and 30g Parmesan. Once the broccoli is completed, put aside a number of the smaller pieces. Crush the garlic and add to the rest of the broccoli.

3. Put pesto and pasta together. Add the reserved broccoli florets. Pour it into two separate bowls. Give some extra Parmesan, lemon zest, and black pepper on it. Then mix it.

Before serving, decorate these vanilla cupcakes with buttercream. They are very simple making and taste is divine, also treated as a good treat and best for 9-month baby food.

COOK: 20 minutes

Ingredients:

For the cupcake mixture:-

120g butter softened.

120g caster sugar

One egg

1 Tablespoon vanilla extract

120g self-rising flour

For the buttercream freezing:-

140g butter softened.

275g icing sugar

1-2 Tablespoon milk

Food color (optional)

METHOD:

1. Heat the oven up to 160C/180C, Fan/Gas up to 4, and place line a 12-hole muffin tin with cases of paper.

2. Mix sugar with butter properly. Mix eggs with that mixture along with the vanilla extract but eggs should beat separately at first.

3. Fold in self-rising flour; add little milk and mix well until it is dropping its firmness. Spoon the blend into the paper cases until they are 3/4 full.

4. Bake in the oven until it gets golden-brown on top and inserted skewer into one of the cakes comes out. Cool it down for 5-10 minutes. Then put it on a wire rack.

5. For the buttercream freezing, beat the butter until it turns soft. Pour half of the freezing sugar and beat until sleek.

6. Add the remaining freezing sugar with milk as necessary, until the mixture becomes sleek and creamy. Add food coloring (optional) and mix well.

7. Spoon the buttercream into a channeling pack and add a spout of your choice. Pipe in a twirl motion and afterward enjoy!

Sesame chicken with Sticky lemon

PREP: 10 minutes

COOK: 35 minutes

Ingredients:

8-10 skinless, boneless chicken thighs

2 Tablespoon sesame oil

2 Tablespoon cornflour

Zest and juice two large lemons

Two Tablespoons clear honey

Two tablespoon soya sauce

Two Spoon sesame seeds

Cooked rice or noodles, for serving)

Cooked pak choi and sugar snap peas, for serving)

METHOD:

1. Put the chicken in a roasting tin when the oven is heated to 200-220C, Roast for 25 minutes drizzling over the oil.

2. By this time make the sauce. Tip the cornflower in a bowl and stir in the lemon juice until any lumps vanish. Mix soy, sesame, and honey well by adding honey.

3. Get the chicken off from the oven. Make sure to coat well every piece with the sauce. Back to the oven after 8-10 minutes, spooning the sauce over the chicken every 2-3 minutes as it thickens. Distribute with noodles or rice, and veg, with the additional sauce, spilled over the tip.
